Flavors of India

Our “cleanse” is winding down. We’re on the home stretch with only 5 more days to go.

We will have gone 28 days without sugar, bread, pasta (or anything else with gluten), dairy products, red meat, or processed foods. It’s been an interesting, eye-opening and educational endeavor. I will write a post about it once we wrap up. I have much to say, so beware!

Until then however, we are still looking for healthy ways to satisfy our hunger and nuts have been one of our go-to snacks this last month.

I realize that nuts are very calorie dense, but they also offer lots of nutrition and are very satiating. They taste great too, especially when you roast them with a coating of exotic spices.

I gave myself this book by Sally Sampson for Christmas a couple of years ago and it has come in handy lately. I’ve made several of the nut concoction from its pages and I found a favorite today. Thought I’d share the recipe….

Indian Spiced Nuts

-About 2 1/2 cups raw mixed nuts of your choosing (I used a mix of almonds, pecans, and pistachios)
-1 large egg white
-2 T. granulated sugar (I know we aren’t supposed to eat sugar on the “cleanse” but this is not much and the recipe needs a little hint of sweetness. The original recipe calls for a 1/4 cup of sugar but I used much less)
1 tsp. kosher salt
1 tsp. ground cinnamon
1/4 tsp. ground cardamom
1/2 tsp. ground ginger
1/2 tsp. dry mustard

Preheat the oven to 250 degrees. Line a baking sheet with parchment paper or spray lightly with cooking spray.

Mix all ingredients, except the nuts, in a medium bowl until well incorporated. (Take a deep breath while you’re doing this because it smells delicious!) Toss the nuts in the mixture until they are evenly coated.

Transfer the coated nuts to the prepared baking sheet and spread out into a single layer. Bake in the oven for 45 minutes, stirring and turning the nuts every 15 minutes until done.

Removed from the oven and let cool completely. (It may be necessary to separate some of the nuts that have stuck together).

Store in an airtight container.

I love these nuts. They taste like Bombay House, my favorite restaurant.

Brian and I have been doing a month-long "whole foods" experiment as well. I'm so glad you are sharing your recipes. It is giving me good ideas to try.

This cleansing thing must be working. I lost 5 pounds just looking at the stuff you guys have been eating. And I feel clean all over inside. Oh, wait a minute. Maybe it was because I went to church today.
