Now that Mary Kate is on the mend and I can stop worrying about her falling down and being trampled and squashed to death at school (her walk is almost completely back to normal thanks to some good physical therapy), I can turn some of my attention to other, more trivial things like…for instance…
…nut butter.
I’m obsessed with this stuff. I can’t get enough. I’m collecting and hoarding jars of it like it’s going out of style. Sunday morning I pulled out jar after jar from their secret hiding places in the kitchen for the above photo. Mike was watching in shock, “How many jars of that stuff do you have girl?” “Not enough!” I quickly replied.
There are so many delectable flavors of nut butters out there. I still have to try this kind, and this kind, and this kind. And then there is this kind with coconut and white chocolate. Can you understand how good that would be? I love anything with coconut. I bought myself a jar of it and I can’t wait to crack it open.
So many nut butters, so little time!
I also found a few recipes to make my own nut butters that I’m going to try, starting with this one.
I eat these nut butters all sorts of ways…drizzled on my granola or Grapenuts, spread on some whole wheat crackers with a raspberry perched on top, or straight out of the jar with a spoon…but my favorite is to slather some on a thick slice of homemade wheat bread, sprinkle some ground flaxseed on top for crunch and drizzle with just the tiniest bit of honey. Holy Yum!
I still have so many nut butters to try, but right now my favorite is Justin’s Maple Almond Butter. This stuff is so delicious, I can’t even tell you. You should try some. It’s available almost anywhere…even at my secret, undisclosed location (Wal-Mart).
In the morning, as soon as I get the kids off to school, I will make myself a nice think slice of bread slathered with nut butter, poor myself a tall glass of skim milk (my favorite) and sit down to my computer to watch a Fleetwood Mac video on YouTube (did I mention that I recently renewed my obsession with Fleetwood Mac? Stevie Nick’s voice is awesome! I want to have a voice like hers when I go to heaven).
Yes, this is my current morning ritual to get myself pumped up to start the house work. Today I have to do bathrooms so I had myself some Maple Almond Butter on bread and watched my favorite Stevie Nicks video. This video was captured by a little ‘fly on the wall’ camera as Stevie was getting ready for a Rollingstone photo shoot in New York City in 1981.
I can’t figure out why she didn’t record the song this way. I like it so much better than then the actual record.
Also, I wonder if Stevie likes nut butter?

YUM, Jill! Hey, how'd you get your hands on that Trader Joe's nut butter? Are they online?
Kim...I got the Trader Joe's nut butter from my neighbor Colette. She has family in Las Vegas and every time she goes, she ask me if there is anything I want from there. I always have a list.
Oh why don't we have a Trader Joe's in Utah?!!!!
Flax seed? Who are you and where is my sister-in-law???
I hate to say it, but you're eating the kind of stuff you used to make fun of me for. ;-)
P.S. Utah is in severe need of a Trader Joe's.
This is funny to me because I have very recently discovered my love of nut butters as well. I am only on the tip of the iceberg when it comes to sampling, but I seriously have a bowl of bananas with almond butter every day. I LOVE it. So much that I left in the middle of this comment to go eat some. It couldn't wait until the end.
Can't wait to try all of the other nut butters available. I'll start with the maple one.
Where have I been all my life!?! I love peanut butter so so so much, and I love other types of nuts, so why oh why haven't I been exploring? Oh yah, student budget. But maybe now I can work some of the other nut butters into my grocery list. How exciting!
p.s. Go Stevie. She rocks.
I love this post, I love it when you talk about food! They sound delicious. I agreed with Utah needing a Trader Joe's. I am sure it can't be long now. We recently ate at a new burger joint called: Elevation Burgers. It's all natural, organic beef, and their fries are cooked in olive oil. The food tasted...wholesome. I can't believe I just used that word to describe a burger. Anyway, the restaurants are mostly in the east.
I have checked into franchising one, but you need to have a million dollar in the bank as liquid asset, and be willing to open 6 resturants at the same time... CRAZY! Come'n over, and you can shop at Trader Joe's in the mornings and eat at Elevations at night. And I will take you to that fish market, and cook you fish head stew and fish eyeball kabobs. (just kidding)

Jill, Trader Joe's is right behind my house and I go on a regular basis! If you want anything we can grab you some stuff and bring it when we come for Christmas.
And this stuff looks delicious!
Ok, I remember fondly when you smeared a piece of homemade wheat bread with peanut butter for breakfast back in Minnesota when you summered at our house! I think of you fondly whenever any of my kids ask for peanut butter - I am down to my last one asking! (Drew had one for breakfast this morning as a matter of fact!)
